The raw vegan sushi I served to my guests was based on Preet’s sushi paté (the recipe was published in the January 2010 RawBC e-mail newsletter). Preet is the CEO of OrganicLives (1829 Quebec Street, Vancouver, BC) and an all-round amazing person. I consider myself very fortunate to have met him personally. He helped me immensely as I transitioned to a raw vegan diet. I love his sushi paté recipe, though I like replacing the red pepper with carrot. Along with the paté we added sprouts, avocado, finely sliced carrots, celery, cucumber, and yellow pepper in the nori rolls. For dessert, I served Better Than Brownies (chocolate version topped with sun-dried shredded coconut)
Below is a video by Russell James where he shows how uncomplicated it is to roll raw vegan sushi. Having tried rolling nice sushi without a rolling mat, I highly recommend getting one for yourself to help you make better sushi rolls. If you plan on hosting a raw vegan sushi party like I did, you should probably buy a few more so that your guests can join in on the fun of rolling their own nori rolls.
Russell James’s raw living food recipes and style has been an inspirational for me and many of my friends. You should definitely check out his work.
The one downside to the paté I used at my party is that it’s nut-based, and as a result, it’s very heavy. Raw vegan sushi can be so tasty that it’s easy to overeat as a result. I look forward to testing out Russell James’s parsnip “rice” (or similar veggie-only “rice”) at my next raw vegan sushi party
When hosting a party, it’s often nice to have some nice music playing. For my first raw vegan sushi party, I played the album Clear Your Mind by Bop, a self professed “… green tea-drinking, banana-eating vegan with a dog named Booyaka…” hailing from Saint-Petersburg, Russia.
If you’ve never been fortunate enough to try raw vegan sushi or nori rolls, you can order some sushi from the great people at the OrganicLives Cafe (1829 Quebec Street, Vancouver, BC, Canada) or some creative nori rolls from the great people at Gorilla Food (101 – 436 Richards Street, Vancouver, BC).

Oooh, Parsnip “rice.” I love vegan sushi and wasn’t sure how to raw-ize the rice, but now I know. Can’t wait to run out, buy a parsnip, and try it for lunch today!!

Please let me know how your parsnip “rice” turns out. I tried the recipe with carrots instead of parsnips. I found it to be too sweet & see why parsnips will work nicely. Otherwise, the recipe for parsnip “rice” really did fluff up like that in Russell James‘ video. I’m looking forward to trying the recipe again once I get my hands on some organic parsnips.
