The following recipe provides a raw vegan replacement for the more traditional cooked mashed potatoes side dish. It might go well as a side with a raw vegan “meat” loaf or similar sort of dish. The recipe is from Raw Food Formula for Health by Paul Nison.
Special Equipment
- Food Processor
Ingredients
- 3 cups cauliflower florets
- 1/2 pine nuts
- 1/2 cup fresh thyme leaves
- 1/4 cup fresh lemon juice
- 2 cloves of garlic
- olive oil and salt to taste
Directions
- Place all the ingredients in the food processor and process until you get a nice fluffy “mashed potatoes”-like consistency.
Note that you may need to add a very small amount of water to help processes the ingredients (I did). Be careful not to add too much salt. The olive oil you can be more liberal with. That said, I didn’t add that much olive oil or salt to the cauliflower “mashed potatoes” in the picture above.
It’s worth noting that I was happy enough with how the recipe turned out that I would serve this to my friends and family.
